Hello there and happy Monday!
Who said going back to work after summer break is easy, for sure, it must serve its time! Apparently, the tasks overwhelmed me as my college requires more and more if you want to teach there! Even more if you don’t but you have to as a part of your Ph.D journey!
This year, besides all the documents, I needed to make sure that I passed both my psychology and psychiatric tests, and did my medical check-up, things that I didn’t do in the previous years!
Oh, what we do for careers…
However, this is not only why I had some downs in my routine, but also the fact that I have classes 8 hours per day, sometimes even 10. Add almost 2 hours of traffic and here comes my day! This year is kicking my ass and I already feel it!
But today isn’t about what I cannot change, but what I can! And this is my autumn pie recipe!
For years, you know I’ve been posting my pie recipes. If you don’t, you’ll find them here!
But this year I decided to give it a try to a new recipe, and let’s cut to the chance and present it to you!

Crust
- 200 g 80% fat salted butter
- 3 tbsp cold water
- 1 pinch of salt
- 250-350 g flour (HOWEVER this is not mandatory! Use as much as you need, as the quality of flour will influence the amount)
- 1tsp cinnamon
Mix all the ingredients until you form a nice uniform, not sticky, but stretchy dough! Leave it to cool at least half an hour!
Filling
- 1 grape
- 3 pears
- 2 apples
- 50 g sugar
- 30 g cornstarch
- 25 g cinnamon
For the filling, you must wash the fruits, cut the apples and pears into small cubes, then add the grapes, sugar, cinnamon, and starch. Mix all well with a spoon and leave them aside.
Topping
- 1 small egg
- 1 tbsp sugar
- brown sugar
Meanwhile, prepare the egg wash for topping, by beating the egg and the sugar.
Take out the dough, and split it into 2 parts (2/3 and 1/3). Start by rolling the bigger part so it can cover your baking tray. Make sure you leave some margins that you can weave!
Prepare the second dough part, by also rolling it. Now it depends to you, but I prefer cutting it and braiding it on top of the filling!
Put the filling on the first layer of dough on the tray, then add the second layer, or start braiding!
Coat it with egg wash and brown sugar! Then bake it at 165 C for about half an hour!
With this recipe alone, you can taste the autumn all day long, all the ‘ber months and make the most of them!
