Hosting a Healthy Dinner: Stuffed Mackerel in the ove

Good evening dreamers!

As my epoxy crafts are drying up, here I am changing the travel subject for something closer to home! New Year goals, usually come in the form of healthy eating too, not only wanderlusting, this is why I want to share my newest recipe with you.

Well, not quite new, as it was something my mom did while my sister was in college, but I didn’t remember exactly the ingredients, and I chose to experiment a little instead of calling, so here you have the result.

But healthy? It sure is! Fish is the meat we need to consume more often, and so is anything cooked in the oven instead of fried. A serving has around 700 calories, which is perfect for a dinner! Also, it has an amazing nutritional value, as fish not only contains proteins, but good fats too. And if we talked about fats, you can easily choose to let go of the oil and lose some, but I’m a rebel, this is why it’s there!

Another advantage of this dish is the simplicity of it. If you are not into chopping veggies, you can opt for chopping with a robot and stuffing it’s all that’s left!

To be mentioned it’s four servings, and goes amazing with polenta and garlic sauce!

Ingredients:

  • Mackerel (1000g):
    • 2330 kcal
    • Protein: 180g
    • Fat: 179g
    • Carbs: 0g
  • Carrots (200g):
    • 68 kcal
    • Protein: 1g
    • Fat: 0.8g
    • Carbs: 15.4g
  • Onion (100g):
    • 35 kcal
    • Protein: 1g
    • Fat: 0.1g
    • Carbs: 8g
  • Garlic (40g):
    • 40 kcal
    • Protein: 3g
    • Fat: 0.2g
    • Carbs: 7g
  • Lemon Juice (120ml):
    • 8 kcal
    • Protein: 0.3g
    • Fat: 0g
    • Carbs: 1.6g
  • Lemon (100g):
    • 19 kcal
    • Protein: 1g
    • Fat: 0.3g
    • Carbs: 3.2g
  • Tomatoes (150g):
    • 33 kcal
    • Protein: 1.7g
    • Fat: 0.8g
    • Carbs: 5.2g
  • Parsley & Dill (5g):
    • 1.2 kcal
    • Protein: 0.1g
    • Fat: 0g
    • Carbs: 0g
  • Red Pepper (100g):
    • 36 kcal
    • Protein: 1g
    • Fat: 0.4g
    • Carbs: 6.4g
  • Chilli Peppers (25g):
    • 8 kcal
    • Protein: 0.5g
    • Fat: 0.1g
    • Carbs: 4g
  • Sunflower Oil (15 ml):
    • 132 kcal
    • Protein: 0g
    • Fat: 15g
    • Carbs: 0g
  • Wine (120ml):
    • 94 kcal
    • Protein: 0.1g
    • Fat: 0g
    • Carbs: 0.8g

Instructions:

  1. Preparation:
    • Preheat the oven to 150°C.
    • Chop the onions small, cut garlic into halves, lemon into small triangles, peppers into long strips, and tomatoes into small chunks, herb fine.
    • Eviscerate the mackerel and set it aside.
  2. Boil Carrots:
    • Chop carrots into bars and boil them until tender.
  3. Stuffing the Fish:
    • Fill the eviscerated mackerel with boiled carrots, garlic, lemon triangles, and hot chili peppers.
  4. Prepare Tray:
    • Line an oven sheet tray with sunflower oil.
  5. Assembly:
    • Place the stuffed mackerel on the tray.
    • Arrange the remaining chopped ingredients (onions, garlic, lemon, peppers, tomatoes, herbs) around the fish on the tray.
  6. Seasoning:
    • Salt and pepper the fish and the rest of the ingredients on the tray.
  7. Cooking:
    • Roast the entire tray in the preheated oven for about one hour at 150°C. From time to time, turn the fish on the other side
  8. Serve:
    • Once cooked, remove from the oven, and serve the delicious mackerel surrounded by the flavorful roasted vegetables.
