Christmas menu // Christmas cake

Hi there, how are you?

As promised, I’m writing some Christmas menu articles. I started with the essential thing for the holiday season: the wine, now I’m going straight forward to the dessert.

Yeah, that smooth things work…

But enough with the complaints! Let’s get to the sweet talk if you know what I mean!

One thing I love to bake during Christmas is red velvet, but not cake, muffins. The cake is delicious too but it doesn’t support too much weight when it comes to decor, so I stick to muffins and another cake. 

This year I have a simple, maybe cliche decor but it does do the work.

As for the recipe of the cake itself, it’s one of my classics except for the actual cake. I usually use chocolate sponge cake, now I am doing a vanilla one.

What you need:

  • 9 eggs;
  • 9 tbsp sunflower oil;
  • 9 tbsp all-purpose flour;
  • 9 tbsp sugar;
  • 10 g baking powder;
  • 300 g cranberries;
  • 100 g butter;
  • 500 mascarpone-cheese;
  • 5 tbsp sugar;
  • 600 cream for whipping;
  • a box of ice cream cones;
  • green food colorant.

If you are new around, you should know that what I’m saying it’s relative! We might not use the same quality products, and we don’t have the same taste!

What do you have to do:

Sponge cake

  • Separate the eggs;
  • Beat de eggwhites until you get a dense, firm foam;
  • Add the sugar (9 tbsp), spoon by spoon, and incorporate it. You should get a shiny marshmallow-like composition;
  • Add the egg yolks,
  • After you incorporate them, add the flour, sieved, spoon by spoon;
  • Add the oil and mix until you get an even composition;
  • In the end, add the baking powder, and voila!
  • Put it in a baking pan (tall) and bake it in a preheated oven, around 140-160 C.

Mascarpone cream

  • Mix the butter with one tbsp of sugar;
  • After it’s incorporated, add the mascarpone-cheese;
  • Mix everything with the rest of the sugar;
  • In a separate bowl, whisk 400 ml of the cream until it’s firm;
  • With a spoon, incorporate the cream in the butter-mascarpone mixture,
  • Put away some cream for decor,
  • In the end, at the cranberries!

Assemble the cake!

For the decorating part, you have to:

  • Cover the cake with mascarpone cream;
  • Whisk remaining of the cream until it’s firm;
  • Color it green.
  • Chop part of the cones in half. Leave some whole. 
  • Create a design of trees on the cake using the cones;
  • Pipe the cones with green cream to look like pine trees.

Well, this is one option for your Christmas cake. For me, it’s an easy cake and a delicious one! You can easily mix around with fruits you like, but preferably fresh and not moist.
